Fried green tomatoes and other recipes using green tomatoes

Southerners really do eat fried green tomatoes; and they eat fried red tomatoes too. If you haven't tried them, you're in for a treat!

Native to Mexico and Central America, it's not clear how tomatoes came to the United States. Thomas Jefferson grew them in the 1780s and credited one of his neighbors with the introduction, but Harriott Pinckney Horry recorded a recipe "To Keep Tomatoes For Winter Use" in 1770. Alternatively send them to me ~ I love 'em fried.
If you can't bring yourself to do that and if they are a reasonable size ~ pick them, put them in a brown paper bag and place them in a dark drawer or cupboard. In about two or three weeks they should have ripened enough to eat.
That was my Granddad's trick and it always worked for him.
