something i've never eaten, what are they like ??, i'm not a lover of shellfish btw

I lurve 'em, but then I like all shell fish including Crab and Lobster

I like fresh crab but never had lobster.

My father in law reckons scallops have a subtle taste

Your FiL is right .... it is hard to describe the taste and it doesn't suit everyone but give 'em a go ,,,, as long as you are sure they are very fresh (ie LIVE) when you start to prepare them.
