Try this one Wenchy, I've done it a couple of times

Carrot cake
Whisk together, 2 eggs, 200g light brown sugar, 40g veg  oil
Add 230g grated carrot, 100g raisins, 50g  walnuts
Sift in 175g self raising flour, ½ tsp bicarbonate of soda, ½ tsp Cinnamon, ½ tsp mixed spice, Pinch of nutmeg, pinch of salt
Fold all in lightly
Put into  a loaf tin lined with parchment
150° for 1 to 1 ¼ hr

Whisk together, 250g cream cheese, 50g  butter
Add 1 tsp Vanilla extract, some orange rind
Add 275g icing sugar gradually
Put the topping on the cake, chill to set icing

On the subject of cakes I made a lovely chilli chocolate cake a while back but 'accidentally' forgot to warn the greedy lardarse who would always help themselves to a triple portion first time around.....  whistle:
