I rather depends if it is her rack of lamb or plate rack to which you refer . Timings between the two differ considerably.
If the latter touching when the plates are dry is absolutely fine. This is usually in less than half an hour. If it is the former, well here things become a little more complicated.
For raw lamb certainly it is best touched before it becomes maggot ridden otherwise your fingers tend to go straight through it. Most unpleasant and somewhat smelly.
For cooked lamb wait until the meat has cooled to at least 55-60 degrees c Touching prior to this will result in burnt and damaged fingers. This of course is always supposing that you are not wearing oven gloves or mits whilst the touching is taking place.
