Butterfly of Lamb ~ like any other "butterfly" of meat is a method of preparation and cooking that involves the removal of the bone and the spreading out of the resulatant joint as opposed to removing the bone and tieing the meat back into its original shape. Butterfly of Lamb (usually a leg of lamb) bone removed and the leg flattened, marinaded for up to 12 hours and cooked flat on a BBQ. In this shape the meat cooks much more rapidly.
The name "Butterfly" is because of the shape the joint assumes once the bone is taken out and the meat spread out.
