I'd do some sort of mushroom pasta thing probably. I was going to suggest risotto but I see you've already been down that road.

We did the mushroom pasta thing the week before we went on holiday. Not being able to throw in beans is terribly limiting ~ especially given everyone elses allergies, dislikes etc. Why they cannot, like me, eat what is put in front of them I don't know.
