Making due allowance for the Amercanisms and American Measures in the recipe:

"Skillet Cornbread"

3/4 teaspoon baking soda
1&1/2 cups of buttermilk
2 cups of Cornmeal sifted
1 teaspoon salt
1 eggs
1 tablespoon melted bacon fat

Dissolve baking soda in the buttermilk. Mix the cornmeal with salt, egg and buttermilk. Add hot melted bacon fat. Pour into a greased skillet (Baking Tin)  and bake at 375deg f until done.

Not for the faint hearted or those with already clogged arteries.

In place of Cornmeal you can use a 50/50 mix of Polenta and Flour.

1 1/4 cups flour

1 cup skim milk
1/4 cup veg oil
1 egg

I stir all the dry then throw in the wet, mix it together, makes about eight muffins.
In the oven at 200ish (my oven is dodgy) for 15 mins

My recipe is from an American book with a selection of "Southern Cooking" recipes in it and they seem to like this hot bacon fat idea in many recipes. Like I said ~ not for those worried about clogged arteries.
Polenta is finer than American Cornmeal and thus needs flour to help it along but the Yanks go straight for pure Cornmeal and everything is "Buttermilk" ~ no skimmed for them.

Somehow I don't think the rice issue will affect the house bricks, straw possibly  whistle:

Anyhoo, this has got me thinking; a good rice pud's going to have some sugar, milk and some numeg methinks, and will be fairly glutinous. An ordinary rice should do the trick.
Curiously, I had an Oriental meal in a restaurant in Tehran recently and the way the Iranians do rice just doesn't work with Oriental food. They prefer a polished, low gluten rice which is virtually impossible to pick up with chop sticks, unlike the Chinese style rice which sticks together.
Possibly one for the restaurant guide, eh?

Oh that'll work. Pudding rice is just a dearer way of buying risotto rice IMHO

I made this. It has gone horribly wrong. Should it look and taste like a cowpat?
