Perhaps you could contribute to mine then; how d'you cook a pork loin steak without the meat getting tight?  rubschin:
I've grilled and baked them but still not entirely as I'd hoped... I might try another way

Yes, well, not tonight Josephine....

It was done in the fillet steak method; 1 min each side to seal, reduce heat slightly then another 2 mins each side... turned out perfick  cloud9:
