Slice, blanch and freeze 'em.
Before homes had freezers my mum used to bottle them. If you want a recipe I can let you have it.
That's very kind of you Snoops but no thanks many years ago when the dinosaurs first crawled out of the swamps I bottled loads of beans and salted a load too. They were foul, grey things after the process.
When I finally got a freezer I did try blanching and freezing but again they lost their colour on cooking.
