Well?I am listening to Classic Gold on the radio. Rescue Me by Aretha Franklin now playing.

I have some oak smoked lardons which I am going top fry off with onion and two cloves of garlic, and then I will add some passatta sauce with herbs and gently simmer for a while. Soon, I will add a can of condensed creamy soup and simmer for a bit longer. I will be cooking some fresh egg tagliatelle and ladling some of the pasta water into the sauce. Then I will add the pasta to the sauce and coat all over.  Always take the pasta to the sauce, not the other way around.

In keeping with Keith Floyd, I will also have a bottle o'red on the go  cloud9:
