I agree...JOM and Pastis appear to be the culinary experts on the board...(Barman is just an expat, not an expert)  eveilgrin:

Tonight...I am dining, albeit late, on red wine, stilton, apple and crispy wheat and rye crackers  cloud9:

Oi! You seem to be forgetting the only professional chef ~ I've done the courses matey.

Then your doctor is an arse. Your body does not retain cholesterol from the foods that you eat.
Smoking is a far bigger cause of cholesterol build up in your arteries than any amount of red meat, eggs and butter. Refer the silly bastard to the authorities for retraining or suggest he has a chat with a couple of cardiologists from Broad Green Hospital who I know run  regular workshops for local GPs and despair of the levels of ignorance they encounter.

Seriously, eating a balanced diet and taking certain fats in moderation is all you need to worry about. Alcohol and ciggies have a much greater effect of your cholesterol levels and did the good GP mention that there is "good" cholesterol as well as "bad"? It is the difference in levels of the two (the balance between good and bad) that is important. Your body deals with fats by sh*tting them out. Stop eating fats and you will have a problem.
I, as you know, have serious heart problems, am diabetic and overweight (by any measure). My cholesterol levels, checked every three months, are and always have been below average.
