TBH I went to local college part time when we got into the pub business. The certs gained enabled me to bulls-hit that I was qualified in the kitchen but I do have them ..... except the food handling one that is compulsory nowadays as mine has lapsed. One has to take the half day food handling course every couple of years to keep it in date.

Yes the menu & venue do look good ..... but that is the secret and what you pay for ..... never is it based on the price of the food.  noooo:

WTF is a Vegetronic menu?

Watercress £1.00 for 85 grms = enough to make soup for 6 so 17p a portion
Duck Eggs £2.50 for 6 = enough for 6 so 42p a portion
Strawberry & Cream Tart £5 for two = enough for 16 portions so 31p a portion

Prices as of today in local Tesco Store ..... Woodstock has just been shopping and I asked her to price the goodies for me.

Yes I know this is a crap comparison .... Location and service make all the difference to overheads BUT as I used to tell those who complained that I sold Britvic Orange Juice for 60p and Sainsburys sold it for 50p a litre .... Sainsburys do not provide a carpet, tables and chairs, a dart board, a juke box and a half nekkid barmaid as well as good company and someone like me to listen to the customers' shite from opening to closing 7 days a week.

Once was told that for pubs the food costs 1/3, the labour 1/3 and the rest is overheads and what passes for profit.  I guess with rents in Soho ~ £100k a year that split might be more like 1/10, 1/10 and 80%
