That is what has always puzzled me about vegetarians .... If they object to eating meat (and I can accept that) why oh why do they make all the substitutes look and taste like meat? Quorn products are a good example of this ~ as is pretend bacon.
I would seriously like a proper answer.

Serious answer:  I don't know.  There's some fairly logical trains of thought that say that vegetarianism is the least moral of all diets.  I'm no zealot, just always had trouble with the idea of eating animals or fish, thought for years I had to.  And just because I think it's wrong for me doesn't mean I think it's wrong for others.  We served turkey etc at Crimbo and all sorts of meat at our annual family BBQ.

As for eating mock meat then when you spent 40 years eating meals structured around the meat or fish element that's the type of meal and taste you want.  Programmed.
