OMG they are gorgeous! Nothing like UK roasties which are crispy. These you slow cook with loads of olive oil, about 6 chopped tomatoes, chopped onion, garlic and sit them in about half an inch of chicken stock. As they cook they roast on top while soaking the stock from underneath so they go really soft. The olive oil, roast toms and onions form like a chutney which is gorgeous for dunking crusty bread in. Baste them now and then with the tomatoes and the pots come out all rosy red. A sprinkle of oregano too.
