Named/stamped Colliery house bricks plus "Scorrier Bricks" made from the waste slag of iron, copper or tin smelting. The latter slag bricks often bear the name of the company who produced them and are common in areas such as Cornwall

Pure economics.
Bricks were cheaper to make than stone was to quarry, dress and transport.

Simples!

If only it were that simple tho like...  noooo:

What I noticed was that many (I'd say 80%) of the old mine chimneys have a bit stuck on the top... like they were finished and extended later...

I could understand one or two perhaps finding that they'd built it too small but not on such a wide scale...

I wondered if it could be a change of fuel (peat to coal?) that would require a large flue across the entire region...?  Shrugs:

Perhaps you should have stopped at one of the many mining museums that abound in Cornwall and asked them.

You would have also been able to buy a little pencil with Cornwall printed on the side and a notebook to fill with answers to this and other trivia thus making yourself an invaluable asset to any social gathering.

Indeed...

But then I wouldn't have needed to post here and entertain you with the question would I...?
