Try Wenslydale with cranberries BM, cheese to die for.... which will probably happen given time!

Here you go:
Freeze round of brie overnight. Wrap in sheets of filo pastry stuck together with melted butter. Place in oven @160c for about 20mins. Take out, slice like cake and serve with cranberry sauce. Cheese should be well melted and gooey, but not completely liquid. Heavenly.
